It is almost always cheaper to just buy the bike with the bigger motor. So many little things and custom parts will come up. You will end up spending way more money than you think. Plus with the weight differences in the modern liter bikes and 600s there is no reason to change motors.
for stunting this is even more of a waste. Why would you want to spend all the time and money to tear up the finished product?

it will you have to change the motor mount but just get a f4i motor

While that would technically work: 1) If you crash it then you'll only get money back for a 600cc bike, not a custom with a 954cc engine; 2) if you're going to go to all the trouble for all that just to slide under the insurance company's radar, wouldn't it be easier to buy a wrecked 600 and swap all the vin plates? That'd probably be just as legal.
