if that is your only goal, just keep the 600 the way it is, a 600 is more then capable of doing all the tricks, you might just want to gear it a little more.
there are plenty of guys on this board who rock the 600's just as good as anyone on a 1000. van from ROC had a 600 for a long time, with less gear then his motophysco couterparts who had GSXR1000's
just trying to give you an honest opinion, and save you some time and money

The problem comes in with the rad lines. Im not sure what it is called, but on the right side of the motor in the back where the main rad hose come out and run up to the rad, the connection is different on the 2 different motor types. You can either run a longer hose to go from a 889 to 919 or get the right part for it. I ran a longer hose, spliced them together and it worked fine.
Besides that, there should be no problems at all. I had a 1998 motor in my 1995 900rr after I spun my 3rd main bearing. lol

rad line=radiator line
and on 900's, the carbs are interchangable but you'll probably have to tune them because of the motor size difference they would probably be tuned different.
on the 600's, the motors are the same, so the carbs should be the same jetting and everything. BUt again, depending on each bike it'll probably have to be tuned for that motor.

The motor does bolt in directly, yet there are some changes. 1st, the 1993-1994 speedo runs off the front rim. The 1995-1996 or 1997 speedo runs off the front sprocket and the later years run off the transmission.
The radiators are different for the 2 motors. The 889cc motor has a straight/flat rad. the 919cc radiator is a curved unit. This isnt a problem as either one can be used.

the stock jets were a little smaller, but more than likley you have your carbs jetted anyway,if not I would!
