w/ experience and skill anything can be stunted anywhere.
600's are cool anywhere. not as easy to rip up as a 1k on the freeway but are very doable
I'd say bring it up in 2nd and if you're going to balance it out and ride it w/ traffic at 65-70 then you can chill in 2nd. if you're good at shifting and balancing then shift to whatever gear you want.
When my bike was stock I could bring it up in 3rd at 70 mph on the freeway....it was hard as hell but doable.
once I geared it 1 down 2up it would come up in 3rd easy and 4th like it used to in 3rd.
Just take your time and learn all the ways of bringing the bike up. bouncing, clutching, rolling off and on, etc. Whatever becomes most comfortable for you keep practicing it....once you can balance than try other things.
edit* as far as riding them goes alot of people on this site can ride standups forever. I get really tired after 5-6 miles at 65mph

You should have no problem bouncing, clutching, or using the on & off method to get it up in second. Like Sillyneck said once you hit balence point and can keep it thier you should be able to go until you run out of gas. I used to think that I was at balance point becuase I was going about 3/4 of a mile as I sped up. Now I bring it up at about 60-65 and keep it going 65-70 only put it down when my legs get tired. Take it slow and work on it, you'll get it.

it is all about skill. when i 1st started riding last year, i had a 2002 R1 power machine. My dumb *** couldn't get it up on the highway cause my technique was garbage. once i learned to bounce it and roll the throttle it was on. I have seen people get stock 600's up in 4th gear. (Merk from CC)

i can wheelie my buddys telifonica in 3rd gear at about 50 with no problem the longest freeway wheelie i rode on that 600 was like 3+ miles i think i love 600s i am actually thinking of getting one when i get a new bike but i can't decide between a 900rr stunt bike or a gsxr 750-1000 stunt/bling bike or a busa BLING BLING BIKE!!!

i have stock 01 r6 3rd on the highway bouncing no clutch at about 9-10 grand....i have been practicing on timing and can pick up 2nd at 30 and 1st at an idle with no clutch
i cant clutch for **** only in 1st from slow
